Is there any quick and easy recipe with leek?

Leek and Potato Soup


1 bunch leeks, white part only, cleaned and chopped


2 potatoes, peeled and diced


1 cup strong broth of your choice (or stock cubes)


1 litre milk


Salt and pepper


Place veg in a pot and add liquids. Bring to a boil, reduce heat and simmer until potatoes are soft (about 20 min.). Blend until smooth.


You can also leave the soup unblended, and use all stock instead of adding milk.





Leek Omelet


1 leek, white part only, cleaned and finely chopped


2-3 eggs, beaten


Dried dill


Salt and pepper.


Saut茅 leek in a small amount of olive oil until it starts to colour. Add leek to beaten egg, mix well, and pour into frying pan. Season. Cook until omelet is set; turn and finish cooking.Is there any quick and easy recipe with leek?
For quickness, par boil the leek and then put it in an oven dish, while the leek is par boiling add some pancetta and garlic to a separate pan with a smidge of olive oil, when the pancetta is crispy add it on top of the leek then add loads of chedder chease and bake in oven for around 20 - 30 mins depending on gas/leccy heat (personally hate leccy) its bubbles and melts and enjoy

Lots but a real quick and easy one would be:


Fry garlic and chopped onion in butter or oil (or combination of the two) until softened. Add sliced leek and continue to cook until softened. Meanwhile, put a pot of pasta on to boil (tagliatelle is good but any will be ok). Once pasta cooked, drain. Add a good glug of cream and black pepper to the leek, mix together and add to the pasta. Serve with grated parmesan on the top.


Voila.

yes leek and potato soup just boil potatoes till soft then put leaks in and boil for a further 10 mins then liquidise add small amout of milk and there you have it, its lovely with a chunk of crusty bread ooooh think i must go and make sum now!!!!!!
how about with cheese on toast or soup
Chop leeks up and place in a shallow dish with cream, salt, pepper and top with grated parmesan cheese. Bake in the oven for about 20-30 minutes. Delicious!





Bake a potato in the oven. When it is cooked scoop out the insides and mash. Mix it with grated cheese, cooked pieces of bacon, and steamed leeks. Mix together, put back into potato skins and bake in oven for 10 minutes.

Poached Leeks





INGREDIENTS:


鈥? carrots, cut into chunks


鈥? celery stalks, cut into chunks


鈥?-4 sprigs fresh thyme


鈥? bay leaf


鈥arsley sprigs


鈥? Tablespoon black peppercorns


鈥? lbs. leeks (about 8 small, slender leeks)dark green tops cut off and cleaned**





Vinaigrette:





Make this from:


1 Tablespoon red wine vinegar


2 Tablespoons fresh lemon juice


3 Tablespoons olive oil


2 small shallots, very thinly sliced


2 Tablespoons pink peppercorns, slightly crushed


freshly ground pepper


1/2 cup flat leaf parsley, finely chopped





Whisk all the vinaigrette ingredients together and allow to stand.











LEEKS:





1. Fill a large saucepan with water and add the carrots, celery, thyme, parsley, bay leaf and black peppercorns.





2. Brink to a boil, reduce heat and simmer about 30 minutes.





3. Return liquid to boil and add leeks.





4. Cook until tender, about 5-10 minutes. Remove leeks from the liquid and drain well.


To serve:


Toss the leeks with vinaigrette and arrange them on a serving platter.





**To clean leeks: Slice them in half lengthwise, leaving a little attached at the root end to hold them together. Soak them in cold water until free of sand.
Roast it - slice open, trim off ends, drizzle with Olive oil, season and roast in the oven. Slow and low for tender leek, or quick and high for crunchy

Fill quiche case with leek mixture, cover with cheese sauce and bake until golden - absolutely gorgeous, and you can eat it hot or cold
Wrap young leeks in ham if you are not vegetarian, then place in a buttered gratin dish, cover with a cheese sauce and top with grated cheese %26amp; finely chopped spring onions, bake till tender and serve with crusty warm bread rolls.

Im just a 14 year old girl and i love cooking:)


and i do most of the work around the house


because my parents stay at our store until


about 7 or 8


and they work ALL day like starting from 6


so when they are back they are sooo tired and

Easy and Yummy Ground Beef Stroganoff (serves 4)


1 lb ground beef


1/2 c onion


1/2 t salt


1/2 t ground pepper


1 sm can mushrooms (or 1 C sliced fresh mushrooms)


1 can cream of mushroom soup


2 C sour cream





(also have white rice or pasta cook to serve w stroganoff)





Crumble the ground beef and add chopped onions in a frying pan. Cook over medium heat unil meat is browned and onions are soft. Add salt and pepper. Add mushrooms (if using fresh mushrooms cook until they are soft). Next add 1 can soup and cook for 5 min on medium. Just before serving add the sour cream and heat until throughly warmed. Serve over white rice or cooked egg noodles. (Add a green salad and you are all set.)

Delicious Swiss Chicken Bake (really good and an easy dish)





4 Boneless/Skinless Chicken breasts (medium size)


1 Can Cream of Chicken soup


1/4 to 1/2 Cup white wine (or you may also use chicken broth)


4 slices of Swiss cheese (more if you are a cheese lover)


1 1/2 C Crushed seasoned croutons (or any bread crumbs should do.)


1/2 C Butter (melted)





Rinse chicken breasts and dry w paper towel. Then place in a baking dish that has been sprayed w PAM.


Lay Swiss cheese over the chicken.


Mix wine with can of soup and then pour over chicken.


Spread crushed croutons (or bread crumbs) over the top of the soup. Melt butter and pour over the bread crumbs.


Bake at 350 degrees F for about 40-45 minutes.





Serve with rice or mashed potatoes and a vegetable.....or salad...or whatever you please.

There are A LOT of cool cook books out there. I have seen one called three ingredients, or something like that. Go to your local book store and look through some of them.


When I was your age I loved cookbooks and would get them for my Birthday and Christmas and read them all and experiment with what I had.


You don't need a lot to make a great meal or a lot of money.


Think basic. Meat, veggies, herbs, oils, vinagers.

BUTTERMILK BISCUITS


2 1/2 c. self-rising flour


1/4 c. shortening or lard


1 c. buttermilk





Put flour into medium size bowl and cut in the lard until completely blended. Slowly add milk, just until dry mixture is moistened. Roll out on floured surface and cut with cutter or roll with hands (to desired size) and place on a seasoned cast iron flat griddle. Bake at 350 degrees for about 10 minutes or until tops starts to brown. Butter and eat while hot.I am looking for a nice quick and easy recipe for knockout buscuits.?
This is a spin-off of Red Lobster buscuits.


Start with the recipe on a biscuit mix box (for biscuits).


Add 1/2c cheddar cheese.


Bake according to box directions.


Meanwhile, melt 4TB butter with 1TB garlic powder (or to taste - garlic is a personal preference type flavor).


When the buscuits are finished and still warm, brush butter mix over the tops. Couldn't get any easier, and SO good!

    1 can chopped tomatoes, or 8 plum tomatoes skinned and chopped w/ juice


    2 cloves of garlic, chopped


    1/2 minced onion


    1 tbsp olive oil


    1 cup of whipping cream


    Fresh basil, torn


    salt and pepper to taste





    Heat oil in a sauce pot over med heat and add onion and garlic. Saute until onion is soft. Add tomatoes and salt and pepper. Simmer for 10 min.





    Add cream, reserving 2 tbsp. Let the sauce simmer for 20 minutes until slightly reduced.





    Add the last 2 tbsp of cream at the last minute.

    You cant really make a lemon sorbet starting with ice. You need lemon and simple syrup and then you freeze that.





    If you want a slushy lemony dessert quickly, just put some ice, lemon juice, and sugar into your blender and blend away! It will be the consistency of a frozen drink.

    Quick and Easy Coffee Cake


    2 cups sifted flour, sifted before measuring


    2 teaspoons baking powder


    1/2 teaspoon salt


    1/2 cup sugar


    6 tablespoons butter


    1 egg, beaten


    1/2 cup milk


    1 1/2 tablespoons melted butter


    Topping


    1 tablespoon flour


    1/4 cup sugar


    1/2 teaspoon cinnamon





    Into a mixing bowl sift together the flour, baking powder, salt, and sugar. Cut butter into the dry ingredients with a fork or pastry blender. In a separate bowl combine egg with milk; add to flour mixture. Stir until mixture is well blended and smooth. Spoon into a greased and floured 9-inch layer pan. Spread dough evenly. Brush top of dough with melted butter.


    Combine sugar, flour, and cinnamon; sift over the top of the cake, spreading with a fork to cover dough evenly. Bake at 400掳 for 25 to 30 minutes. Cut coffee cake in wedges; serve warm from the pan.Does any one have a quick coffee cake recipe?
    I usually don't even use a recipe, but it's something like this:





    1 cup milk


    1 stick butter


    2 eggs


    2 cups flour


    1TBS baking powder


    1/2 tsp salt


    1/2 Cinnamon





    Melt the butter with about 1/3 of the milk. when it is completely melted add in the rest of the milk. If it is not too hot add in the eggs.





    Mix the flour and BP and add into the wet mix, but save about 1/3 cup for the topping.





    Mix the remaining mix with about 3/4 cup brown sugar and about 1 tsp cinnamon. Rub some soft butter into it --about 2tbs.





    Pour the batter into a 9'; circular pan and top with the brown sugar mix. Bake at 400 until done.

    This is dinner party delicious and is cheap and easy to make, it's from Nigella Lawson serves 2 to 3.





    Thai Chicken Curry





    1 jar x Green Thai curry paste (Must be Barts)


    1 x Onion (NL uses spring onions but normal onion is just as good)


    2 x chicken breasts doesn't have to be the expensive ones


    1 x tin low or full fat Coconut milk


    Chicken stock cube dissolved in mug of hot water (optional)


    Frozen soya beans


    Frozen fine beans (green beans)


    Frozen peas


    Rice


    Fresh Coriander (optional)





    Chop and fry onion in a little oil, when soft add thai curry paste. Stir for a couple of mins then add chopped chicken breast and cook until tender, add coconut milk and cook for 4 - 5 mins. If starts to soak up coconut milk add the chicken stock cube dissolved in a mug full of hot water. Add frozen peas and soyal beans. Simmer for about 10 mins then add the fine beans (green beans) and cook for about 5 mins.     Mince Curry





    Ingredients (serves 4)


    2 tablespoons vegetable oil


    1 brown onion, finely chopped


    2 garlic cloves, crushed


    2 tablespoons madras curry paste


    650g beef mince


    400g can diced tomatoes


    1 cup frozen peas


    steamed basmati rice, mint leaves and pappadums, to serve


    Method


    Heat oil in a large saucepan over medium-high heat. Add onion and cook, stirring, for 3 to 4 minutes or until soft. Add garlic and cook for 1 minute. Add curry paste and cook, stirring, for 1 minute or until aromatic.


    Add beef and cook, stirring with a wooden spoon, for 4 minutes or until browned. Add tomatoes and bring to the boil.


    Reduce heat to medium. Cook, uncovered, for 5 minutes or until liquid has almost evaporated. Stir in peas and cook for 1 minute or until peas cooked through. Spoon curry over rice. Top with mint.

    Cooking Time 35 minutes





    Ingredients (serves 4)


    145g (1 cup) macaroni pasta


    1 tablespoon butter


    1 brown onion, finely chopped


    2 tablespoons plain flour


    2 cups skim milk


    1 tablespoon wholegrain mustard


    1/2 cup grated light tasty cheese


    185g can tuna in spring water, drained


    2 tablespoons flat-leaf parsley leaves, chopped


    1/2 cup wholegrain breadcrumbs (see note)


    steamed vegetables, to serve


    Method


    Preheat oven to 180掳C. Grease a 6-cup capacity ovenproof dish. Cook pasta following packet directions. Drain.


    Meanwhile, melt butter in a large saucepan over medium-high heat. Add onion. Cook, stirring, for 1 to 2 minutes. Add flour. Cook, stirring, for 1 minute. Remove from heat. Gradually add milk, stirring until smooth. Return to heat. Cook, stirring, for 5 minutes or until mixture comes to the boil.


    Remove from heat and stir in mustard, cheese, tuna, parsley and pasta. Season with salt and pepper. Spoon mixture into prepared dish. Sprinkle with breadcrumbs. Bake for 20 to 25 minutes or until top is golden. Serve with steamed vegetables.

    Beef and lentil slice





    Ingredients (serves 4)


    olive oil cooking spray


    2 slices soy and linseed bread


    2 small red onions


    2 carrots, peeled, trimmed


    450g extra-lean beef mince


    400g can lentils, drained, rinsed


    1 eggwhite, lightly beaten


    1/2 cup salt-reduced beef stock


    100g mixed baby salad leaves


    1/3 cup Baxters Tomato Chutney with Red Pepper, warmed


    Method


    Preheat oven to 180掳C. Spray a 5cmdeep, 20cm (base) square ovenproof dish with oil. Place bread in a food processor. Process to fine crumbs.


    Finely chop 1 onion and 1 carrot and place in a large bowl. Add mince, 3/4 cup of lentils, eggwhite and stock. Mix until well combined. Press mixture firmly into prepared dish. Bake for 30 minutes or until cooked through.


    Preheat a grill on high heat. Place slice under grill for 5 minutes or until browned.


    Meanwhile, thinly slice remaining onion. Peel remaining carrot into long, wide ribbons. Place in a bowl. Add salad leaves and remaining lentils. Toss to combine.


    Cut slice into four pieces. Divide between plates. Top with salad and dollop of chutney.
    I would suggest googling 'cheap and easy recipes' as there are some many great websites out there. For starters try the sainsburys website, which has a feed your family for a fiver section.


    Currys and most kinds of stew are good as a cheaper cut of meat is fine to use because it is cooked on a low heat for a long time, making it tender. Also frozen fish is cheap and healthy and takes no time at all to defrost and some brands can be quickly cooked in the microwave!

    GARLIC %26amp; OIL PASTA (AGLIO E OLIO)





    Per Person





    INGREDIENTS





    1 clove of garlic


    1 tablespoon of olive oil


    125ml of water


    录 of a teaspoon of salt


    100g of spaghetti


    Ground pepper to taste





    METHOD





    Peel the garlic and chop it into tiny pieces.





    Put the oil into a frying pan on a moderate heat. Add the garlic. Fry the garlic for about 5 minutes until it is brown, stirring to stop it sticking.





    Put the water and salt into a saucepan and bring to the boil. Put the pasta into the water. Stir it to stop it sticking to the bottom of the pan. Bring back to the boil and continue to cook, stirring to stop it sticking.





    Begin testing the pasta about 2 minutes before the packet instructions say it should be done. The best way to judge if pasta is cooked is to bite it. This is tricky, because if you fish out a bit and stick in your mouth you may burn your mouth on the boiling water. Wait a bit and blow on it, then bite it. If it is hard it needs longer. If it is chewy (or 鈥榓l dente鈥? Italian for 鈥榯o the teeth鈥? it is ready. If it is soft it is overcooked.





    Drain the pasta in a sieve or colander. Season with the pepper.





    Always 鈥榯ake the pasta to the sauce鈥? Put the pasta in the pan with the sauce and stir until thoroughly coated.





    ADDITIONS %26amp; ALTERNATIVES





    Use any other long thin plain pasta, like linguine (thin and flat), tagliolini (very thin and flat) or spaghettini (very thin and round), instead of spaghetti.





    For Garlic %26amp; Parsley Pasta, add 25g per person of fresh parsley. Wash, shake dry and finely chop the parsley. Add the parsley just before serving.





    For Garlic %26amp; Anchovy Pasta, add 13g (录 of a 50g tin) per person of anchovy fillets in olive oil. If you are using the whole tin, use the oil from this to fry the garlic. Add the anchovies to the garlic after the 5 minutes and mash up until smooth.





    For Garlic, Anchovy %26amp; Olive Pasta, add 2 or 3 pitted black olives and 2 or 3 pitted green olives per person to the Garlic %26amp; Anchovy Pasta just before serving.





    TIPS





    If you use enough water, add the pasta when the water is boiling, stir the pasta and don鈥檛 wander off (鈥楪li spaghetti amano la compagnia鈥?or 鈥榮paghetti loves company鈥? and don鈥檛 overcook it, adding olive oil to the water to stop it sticking is totally unnecessary.





    PS. I have seen this dish on a restaurant menu for 拢8.50!

    This recipe is really easy, and doesn't take long.





    Red Potatoes





    4 -6 BIG potatoes (2-1/2 lbs), boil in the skins, cool, then peel and cut into cubes.





    In a pot, heat 1/2 cup oil. Fry gently: 1/2 tsp mustard seeds, 1/2 tsp cumin seeds, 1 - 2 finely chopped serrano peppers, 2%26amp;1/2 tsp tomato paste, 1/2 tsp salt, 1/2 Tbsp chili powder, 1/2 Tbsp cumin powder. You can add more cumin powder and chili powder if you want, for taste.





    When spice mix is fragrant (about 1 min of frying), mix in the chopped up potatoes and heat for 2 -3 minutes . Add a lot of chopped fresh cilantro and serve.Please help! i need quick. easy vegetarian indian recipes...today?

    Mexican layered dip-- just make it with whatever you have on hand. Some layer ideas


    Refried beans mixed with salsa, ground beef seasoned with taco seasoning, black beans, lettuce, chopped tomatoes, sliced black olives, guacamole, sour cream, shredded Mexican or Monterey Jack cheese, etc.





    Quesadillas-- any of these with salsa (optional) and choice of cheese (Monterey Jack and Mexican blend are my favorites).


    Veggie quesadillas-- bell pepper, tomato, onion, black beans, mushrooms, zucchini, spinach, etc.


    Bacon Avocado quesadillas-- diced bacon, avocado, mushrooms, tomato.


    Chicken quesadillas-- chicken seasoned with taco seasoning, refried beans, green onion, fresh cilantro.





    Greek quesadillas


    1 small onion, chopped


    2 tsp olive oil


    2 cloves garlic, minced


    1 (7 oz) package fresh baby spinach


    4 oz crumbled feta cheese


    3 oz softened cream cheese


    1/2 cup ricotta cheese


    1 tsp fresh lemon juice


    1/4 tsp ground cumin


    1/4 tsp salt


    1/4 tsp ground black pepper


    1/8 tsp grated nutmeg


    4 tortillas (8 inches each)


    2 tbsp butter


    --Cook onion in the olive oil in a large skillet until tender, 5-6 minutes. Add the garlic and heat until fragrant. Add the spinach and cook several minutes until the spinach starts to wilt. Drain the spinach on paper towels and allow to cool. Mix feta, cream cheese, ricotta, lemon juice, ground cumin, salt and pepper until smooth. Add the spinach to mixture, and stir to combine. Spoon 1/2 of the mixture onto 2 tortillas and top with bare tortillas. Heat 1 tbsp butter in clean skillet and place one quesadilla in skillet. When underside begins to turn golden, flip quesadilla, and brown the other side. Repeat with remaining quesadilla. Cut quesadillas into 4-6 wedges.





    Another idea is a block of cream cheese topped with jalapeno jelly served with crackers.





    Or spread softened cream cheese straight onto a plate, top with a can of chili, and then 1-2 cups shredded cheese. Microwave 2-3 minutes or until shredded cheese is completely melted and dip is hot. Serve with tortilla chips.

    1/2 cup sugar


    1 cup cold butter


    --Combine flour and sugar. Cut in butter and mix until crumbly. Knead by hand for 7-8 minutes until a soft, smooth dough forms. Press into a 9x9 inch square pan and prick all over with a fork. Bake at 375 degrees for about 15 minutes or until golden. Cut into squares while still warm. *I like dipping half of each shortbread square into melted chocolate bark and then allowing to them to set on wax paper*





    Dorito Dip


    1 (10 oz) can sloppy joe mix


    1 lb ground beef


    1 (10 oz) can refried beans


    2 (10 oz) cans cheddar cheese soup


    1 (10 oz) can tomatoes


    --Brown ground beef and drain well. Mix all ingredients well. Heat and serve with doritos or favorite tortilla chips.

    3 ounces cream cheese, softened


    2 tablespoons sugar


    3 tablespoons low-fat milk


    2 cups thawed whipped topping

    Another no fail is baked pierogies. You can buy mini pierogies in the freezer section. Spray a cookie sheet with Pam, then put the pierogies on the sheet.     The last sounds nasty, but it's really good. Spread two packages of softened cream cheese in the bottom of a baking dish. Top with a jar of salsa and bake at 350 for about 10 minutes. You just want it to get hot, not bubble, the cheese will curdle. Serve with tortilla chips.

    Get one white, soft, tortilla shell ... and put some of the ground meat in the middle of the shell .. sprinkle lightly with cheese .. then fold in half.





    Slowly fry one side of the folder white tortilla shell until it is light golden .. it only takes a few seconds .. not much heat, not much grease in the pan.





    Use the forks to turn the tortilla .. and fry the opposite side of the tortilla until it is light golden.





    Take the fried tortilla out of the pan ... add the lettuce %26amp; tomato on top of the ground meat ... then sprinkle with cheese on top.





    Walla .. you have a great taco.

    2. Lay 1 sheet of puff pastry on a floured board and carefully roll it out to 10 by 12 inches. Place it on a sheet pan and brush the center with the mustard, leaving a 1-inch border around the edge. Place a layer first of ham and then cheese, also leaving a 1-inch border. Brush the border with the egg wash.


    3. Place the second sheet of puff pastry on the floured board and roll it out to 10 by 12inches. Place the second sheet on top of the filled pastry, lining up the edges. Cut the edges straight with a small, sharp knife and press together lightly. Brush the top with egg wash and cut a few slits in the top to allow steam to escape.

    1 (16 ounce) package fettuccini pasta


    3 egg yolks


    1 cup heavy cream

    salt and pepper to taste





    Serves 6.





    Heat olive oil in a large heavy saucepan over medium heat. Saute shallots until softened. Stir in onion and bacon, and cook until bacon is evenly browned. Stir in garlic when bacon is about half done. Remove from heat.

    Saute pepper and onions in olive oil until almost tender. Add sausage and beef to peppers and onions and brown. (You can use sausage links and remove casing if it's difficult to find bulk hot Italian sausage.) Add remaining ingredients to meat mixture and stir until well blended, Cover and simmer for 5-6 hours.





    Suggested Wine: Full-bodied red


    Serving Ideas : Serve with crusty, hot garlic bread to sop up sauce.





    NOTES : I've never really measured the seasonings. I usually fill the palm of my hand twice with both the basil and oregano and rub it to release the flavor. I sprinkle the garlic powder on top of the sauce mixture until the surface is well covered. The amount of seasoning always seems to be right doing it this way. Take care not to scorch the sauce as it is very thick and can stick quickly. The sauce is ruined once it scorches. Ask me how know this....... I use a heat diffuser under the pan and stir every 1/2 hour. You will need at least a 6-quart pan to cook this in. I freeze this in 1 1/2 pint containers which is just the right size for a very generous meal for two with usually a small lunch for later in the week. Oh, by the way, that extra 1/2 can of beer? That's for the cook!

If you have diced tomatoes, add them as well, but drain the juices. If you like a thicker sauce, add a small can of tomato paste.
    Some olive oil, pasta water, cheese (like parmigiano or asiago, preferable something hard and stinky but goats cheese makes a nice creamy sauce...you can use whatever you have), pepper, and herbs. The cheese, oil and water will make a light sauce.     Make basic white sauce thin or medium. Add the other ingredients. Cook veggies like (mushrooms, broccoli, cauliflower, bell tomatoes, red peppers) etc. or cook seafood (in wok) works well.





    Add to white sauce seafood or veggies and serve over pasta (linguini).

    Instructions





    Dice onion, carrot and capsicum into 1 cm cubes. Heat oil add onion, garlic and grated ginger. Saute for 3 mins. Add carrots, capsicum and saute for 5 mins. Add chilli and ground cumin, fry 1 min. Add tomato paste and stir in water. Chop basil add to sauce, season well with salt and pepper. Simmer for 15 mins, stirring frequently. Remove from heat, add beans and heat through on stove. Serve with corn chips, vegan sour cream, vegan guacamole and shallots. Accompany with sweet corn and jacket potatoes.

Cover with canned green chili enchilada sauce and cover the whole thing with mozzarella and pepper jack cheese (can use whatever cheese you like, this is just my preference). Bake in the oven at 350 until cheese is melted and sauce is bubbly. Might cover with foil the first 30 minutes or so, otherwise cheese tends to burn. Always spray your foil with cooking spray before you put on a cheese dish to prevent from sticking!

    Going off of memory:


    Grease pan... put in dry yellow cake mix (save some to sprinkle on top) then poor peaches on top .. all over (I always used canned.. it's juicier.. so you may want to add extra butter or sprinkle sugar to make it juicier)





    Then use probably a stick of butter and cut it into chunks and place all over peaches.. then bake.. probably at the 350 .. for about 20 - 20 minutes... It melts the butter and peaches into the mix.. for the crust... yummy

    1 stick real butter, melted in 13 x 9 casserole.


    Mix in large bowl 1 cup self rising flour

    You just need a box of plain white cake mix and peaches (canned perferably, but I guess you could thaw out the frozen ones).





    Pour the peaches into a glass cassarole dish and simply pour the dry cake mix over top (don't mix) but kinda poke the cake mix so that it absorbs some of the peach juice.





    Id say 350 for like 20 minutes. Or when the top starts to turn light brown.

    Simple Peach Cobbler~





    4 cups peeled, sliced peaches


    2 cups sugar, divided


    1/2 cup water


    8 tablespoons butter


    1 1/2 cups self-rising flour


    1 1/2 cups milk





    Preheat oven to 350 degrees F.


    Combine the peaches, 1 cup sugar, and water in a saucepan and mix well. Bring to a boil and simmer for 10 minutes. Remove from the heat.





    Put the butter in a deep baking dish and place in oven to melt.





    Mix remaining 1 cup sugar, flour, and milk slowly to prevent clumping. Pour mixture over melted butter. Do not stir. Spoon fruit on top, gently pouring in syrup. Batter will rise to top during baking. Bake for 30 to 45 minutes.





    To serve, scoop onto a plate and serve with your choice of whipped cream or vanilla ice cream.





    Crock Pot Cobbler~





    3/4 cup all-purpose baking mix


    1/3 cup sugar


    1/2 cup packed brown sugar


    1/2 can evaporated milk


    2 teaspoons margarine or butter, melted


    2 eggs, slightly beaten


    3 large, ripe fresh or canned peaches, peeled, pitted and chopped


    2 teaspoons vanilla


    3/4 teaspoon) cinnamon


    Vanilla ice cream (optional)





    Lightly grease slow cooker or coat with non-stick cooking spray. Combine baking mix and sugars in a large bowl. Stir in milk, margarine and eggs. Add peaches, vanilla and cinnamon. Stir until ingredients are well incorporated. Pour into slow cooker. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours. Serve warm.





    Panic Cake with Peaches~


    Spread peaches in a 9x13'; pan. Pour dry yellow cake mix over the peaches. Drizzle 1 cup of melted butter over the cake mix. Place pecans or walnuts on the top. Bake at 350 degrees for 30 to 40 minutes. This is not a true cobbler~just a simple recipe that is similar to a cobbler and can be used with any fruit or pie filling. Apple is better with spice cake :)
    This ones quick, but its not with frozen peaches, but i figured id let u know anyways:


    MEGA E-Z PEACH COBBLER





    1 pkg. of yellow cake jiffy mix


    1 big can of canned peaches





    In a baking pan, evenly pour the baking mix. Then pour the peaches and juice on top of it. Bake according to the directions on the jiffy mix box.

    * 2 lbs. ground lean pork


    * 1 lb. ground lean beef chuck


    * 2 lg. onions, finely chopped

    * 2 1/2 tsp. poultry seasoning


    * 2 tsp. salt


    * 1/2 to 2 tsp. pepper


    * 1 tsp. celery salt


    * 1/2 tsp. ground sage


    * 1 c. water


    * 3 med. potatoes, mashed


    * 2 pkgs. pie crust mix





    Method:





    Combine pork, beef, onion and garlic in large heated skillet. Cook, stirring often until meats lose pink color. Stir in poultry seasoning, salt, pepper, celery, sage and water. Cover. Simmer 20 minutes. Uncover, simmer 10 minutes longer. Remove from heat. Stir in mashed potatoes. Cool. Prepare pie crust mix. Divide into fourths. Put crust into 9-inch pie shell, spoon half of cooled meat mixture into shell. Fold over edges of crust. Brush with egg. Put on top crust. Trim. Brush with egg. Cut slits in middle. Repeat for second pie. Bake at 425 degrees for 15 minutes then reduce heat to 350 degrees and continue cooking for 25 minutes. Bake and freeze or serve right away. Makes two pies.





    CHRISTMAS CASSEROLE





    7 slices bread, cubed (white, French, or sourdough)


    1 c. shredded Swiss cheese


    1 c. shredded cheddar


    1 lb. cubes turkey, ham


    4 eggs


    2 1/4 c. non-fat milk


    3 tsp. dry mustard


    1 can cream of mushroom soup


    1/2 c. non-fat milk


    Sauteed onions or green peppers; optional





    Place bread cubes in bottom of 9 x 13 greased baking dish. Sprinkle cheese and meat over bread.





    Beat eggs, mustard, 2 1/4 cup non-fat milk. Pour over bread mixture. Mandatory: refrigerate overnight. Then dilute soup and 1/2 cup non-fat milk. Pour over casserole. Bake at 300 degrees for 1 1/2 hours.

    First, saute some garlic, and maybe some onion in a pan with 1 tbsp of EVOO, and 1 tbsp butter.





    Next, add some dry white wine, maybe a 1/4 cup, and a 1/2 cup of chicken stock... and reduce by half.





    Then add can of the milk.


    -Also, zest in a lemon for added flavor (don't use any juice), and throw in some fresh thyme.





    Last, add in about 1 cups of freshly grated parmesan cheese.





    Season with salt and pepper. If it's not thick enough for you, you can add some cornstarch. Just added it to about a tablespoon of cold water, or milk and stir it up, before putting it in the sauce.





    This is a great alfredo type cream sauce. You can also use marscapone cheese, about 1 cup to add an amazing flavor. Also try adding peas and spicy italian sausage.





    Serve it with Penne, or Farfalle (bow tie) pasta

    Vanilla Bean Ice Cream


    Homemade vanilla ice cream is simple to make and tastes so much better than the store bought ice cream. You don't need an ice cream machine to make this recipe but using one makes it easier to get consistent results.





    The vanilla seeds add some texture to the ice cream and the small black specks are the mark of authentic vanilla ice cream. If you prefer your ice cream without the specks then pour the cream mixture through a strainer before combining it with the egg mixture.





    Ingredients


    2 1/2 cups heavy whipping cream (or half light cream and half heavy cream)


    1 whole vanilla bean


    4 Large egg yolks


    1/2 cup sugar





    Pour cream into a saucepan. Use a sharp knife to split the vanilla bean length and scrape out the seeds inside. Stirs the seeds and empty vanilla pod into the pot. Bring the mixture almost to a boil over medium heat. Reduce heat to low and allow vanilla flavor to infuse for 30 minutes, stirring occasionally.





    Put the eggs yolks and sugar in a bowl and whisk together to make a smooth pale yellow mixture. Remove the vanilla pod and slowly add the hot cream mixture to the egg mixture while stirring. When completely mixed pour the entire mixture back into the saucepan. Cook over medium heat while stirring constantly until the mixture is thick enough to coat the back of the spoon. Do not let the mixture boil.





    Remove from heat and pour mixture into a bowl to cool. You can place a sheet of plastic wrap directly on the custard to prevent a skin from forming while it cools.





    If using an ice cream machine, follow the manufacturer's directions to churn and freeze the custard. Alternatively, freeze the custard for 1 - 2 hours until it begins to set around its edges.     8 Chicken pieces (thighs, legs, breast)


    2 Tbsp ginger paste


    2 Tbsp garlic paste


    1 cup finely chopped onion


    6 cardamoms


    4 cinnamon sticks


    1 cup sweet yogurt or cream


    2 tsp salt


    3 Tbsp butter


    1 Tbsp lemon juice


    A few golden raisins or almonds, if desired


    In a saucepan combine the ingredients except lemon juice and raisins/almonds.





    Mix spices with the chicken, cover the pan, cook over medium heat for 10 min. Lower the heat and cook for 30 more minutes.





    When oil separates from gravy, add lemon juice. If desired, sprinkle almonds or golden raisins on top. Keep over very low heat for 5 minutes.

    Chicken Curry


    For spicy rice:


    1 teaspoon Each coriander seeds, cumin seeds, mustard seeds


    2 cups Basmati rice, prepared according to package directions


    3 tablespoons Vegetable or canola oil, 3 turns of the pan


    1 1/3 to 1 1/2 pounds Chicken breast tenders, diced


    2 to 4 cloves Garlic, minced, mild to extra spicy


    1 To 2 inches fresh ginger root, minced or grated, mild to extra spicy


    1 Large yellow skinned onion, peeled and chopped


    1 can Chicken broth, about 2 cups


    2 tablespoons Curry paste, mild or hot


    1/3 to 1/2 cup Mincemeat


    Coarse salt


    2 tablespoons Flour


    Preparation





    Prepare rice to package directions. For spicy rice, toast coriander, cumin and mustard seeds in the bottom of a medium saucepan in 1 tablespoon of extra-virgin olive oil. When seeds pop and you can smell seasonings, add water and prepare rice as directed.








    Heat 2 tablespoons of extra-virgin olive oil in a large, deep nonstick skillet over medium high heat. Add chicken and lightly brown. Remove chicken. To same pan, add garlic, ginger and onions and saute together for 3 to 5 minutes. Add flour and cook 1 to 2 minutes. Add chicken broth to the pan and bring to a bubble. Add curry paste and mincemeat and reduce heat to medium low. Add chicken pieces back to the pan. Taste and add a little salt, if you feel it necessary. Simmer curry 5 to 10 minutes.








    Assemble your toppings in small dishes. Serve curry in shallow bowls with scoops of rice or spiced Basmati. Garnish with any or all of your

    Homemade Chicken Stock:


    1 teaspoon whole black peppercorns


    6 sprigs fresh dill or 2 teaspoons dried dill


    6 sprigs fresh flat-leaf parsley


    2 dried bay leaves


    2 leeks, washed, white and pale-green parts only, cut into 1/3


    2 carrots, scrubbed, cut into 1/3


    2 stalks celery, cut into 1/3


    1 (4-pound) chicken, cut into 6 pieces


    1 1/2 pounds chicken wings


    1 1/2 pounds chicken backs


    2 (48-ounce) cans low-sodium chicken broth, about 12 cups


    6 cups cold water


    Place peppercorns, dill, parsley, bay leaves, leeks, carrots, celery, chicken, wings, and backs into a large stockpot. Add stock and 6 cups cold water. Bring to a boil. Reduce to a very gentle simmer, and cook for 45 minutes. Liquid should just bubble up to the surface. A skin will form on the surface of the liquid; skim this off with a slotted spoon, and discard. Repeat as needed. After 45 minutes, remove chicken from the pot, and set aside until it is cool enough to handle. Remove the meat from the bones, set the meat aside, and return the bones to the pot. Shred the chicken, and set aside in the refrigerator until ready to use. Continue to simmer the stock, on the lowest heat possible, for 3 hours, skimming as needed. The chicken bones will begin to disintegrate. Strain the stock through a fine sieve into a very large bowl. Discard the solids. Place the bowl in an ice bath, and let cool to room temperature. Transfer to airtight containers. Stock may be refrigerated for 3 days or frozen for 4 months. Refrigerate for at least 8 hours, or overnight. If storing, leave fat layer intact to the seal the stock. Before using, remove the layer of fat that has collected on the surface.





    Toppings and garnishes, mix and match:


    4 scallions, chopped


    1 cup toasted coconut


    1/2 cup sliced almonds or Spanish peanuts


    1 cup prepared mango chutney


    1 /4 cup finely chopped cilantro leaves

    Microwave Chicken Curry

    2 tablespoons Indian curry paste


    3 tablespoons olive oil


    4 boneless, skinless chicken breasts, cut into strips


    1/2 bunch basil, leaves chopped


    1/2 bunch cilantro, leaves chopped


    2 (13.5-ounce) cans coconut milk


    2 tablespoons soy sauce


    Kosher salt


    Freshly ground black pepper


    Steamed rice, to serve


    Paprika, for garnish


    1 scallion, thinly sliced, for garnish





    In a large microwave safe pot with a lid, mix together the curry paste and oil. Microwave on high for 3 minutes. Add the chicken to the pot and stir. Cover with the lid and microwave on medium for 8 minutes.





    Add the basil, cilantro, coconut milk, and soy sauce and season with salt and pepper. Give it a good stir, cover it, and microwave on medium for 4 minutes. Stir it again, cover, and let it rest for 3 or 4 minutes. Serve over steamed rice, garnished with paprika and scallions.

    Simple chicken curry





    time to make 45 min 5 min prep





    50 ml oil


    1 onion, finely chopped


    30 ml curry powder


    15 ml garam masala


    2 ml ground turmeric


    3 cinnamon sticks


    15 ml freshly grated ginger


    15 ml freshly chopped garlic


    1 tomato, finely chopped


    500 g chicken pieces (drumsticks and thighs)


    2 parboiled potatoes, peeled and cut into quarters











    1. Heat oil and fry onion until slightly browned.


    2. Add curry powder, garam masala and turmeric.


    3. Cook for 5 minutes over medium heat.


    4. Add cinnamon sticks, ginger, garlic and chopped tomato and cook for 10 minutes.


    5. Add chicken pieces and 250 ml water and cook for a further 10 minutes.


    6. Add potatoes and an extra 125 ml boiling water.


    7. Reduce heat and simmer for about 15 minutes until chicken is tender and curry is slightly thickened.


    8. Season with salt to taste and serve with basmati rice and fresh coriander.

    INDIAN CHICKEN CURRY





    2 lb. chicken cut up


    1/4 tsp. garlic powder


    1/4 tsp. ground cinnamon


    1/4 tsp. ground cloves


    1/2 tsp. ground ginger


    2 tbsp. plain yogurt


    1 c. onions, chopped


    2 tbsp. tomato paste


    4 tbsp. cooking oil


    2 tsp. salt


    1 tsp. red pepper


    1 sm. can mushrooms





    Clean and wash the chicken. In a large, deep pan heat the oil. Add the onions and saute until golden brown. Add yogurt, tomato paste and all the spices. Let simmer on slow heat for 15 minutes, or until a thick paste has formed. Add chicken pieces and mushrooms. Let cook on medium heat for about 25 to 30 minutes until most of the liquid disappears. Serve with plain rice and bread. Note: You can use one box of frozen cut spinach instead of the mushrooms.

    Yellow Chicken Curry





    This chicken curry recipe from Thailand uses dry roasted spices and fresh ingredients to make a aromatic curry paste. You may make the curry paste from scratch or simply used canned like Mae Ploy or Mae Sri brand. Refrigerate any leftover paste in a ziplock bag. It will keep for at least a month.





    Yellow Curry Paste Ingredients





    * 12 dried thai chilis


    * 2 tsp sea salt (or coarse salt)


    * 2 shallots, peeled


    * 4 cloves garlic, peeled


    * 1 thick slice fresh galangal (or dried galangal soaked in water until softened)


    * 1 stalk lemon grass, sliced crosswise (discard tough outer leaves and the root end)


    * 1 thick slice peeled ginger root


    * 1 tbsp coriander seeds


    * 1 tsp cumin seeds


    * 2 tsp curry powder


    * 1 tsp shrimp paste (kapee)





    Preparation





    Dry roast corinder seeds and cumin seeds until fragrant over low flame in a heavy bottom pan (be careful not to burn). Set aside. (See a more detailed explanation of dry roasting spices).





    Pound in a mortar and pestle or process in a small blender/food processor container in the following order: dried chiles, sea salt, shallots, garlic, galangal, lemon grass, and gingerroot. Process or pound until smooth but some small pieces can still be seen.





    Now add the roasted spices and curry powder. Process or pound again until the seeds are completely broken up into powder and the paste is blended through. Last add the shrimp paste and gently blend in, using the mortar or processer.
    Ingredients :


    1 large chicken


    2 onions


    2 cloves garlic


    1 small root ginger


    1/4 l yoghurt


    1 teaspoon chilli powder


    1 teaspoon garam masala


    1 teaspoon powdered coriander


    1 teaspoon red food colouring


    juice of 1 lemon


    salt





    Garnish :


    Slices of lemon


    Lettuce leaves


    Slices of tomato and onion





    Recipe :


    Joint the chicken, remove the bones and slice the flesh.


    Grate the onion, garlic and ginger.


    Mix the vegetables into the yohurt, with the chilli, garam masala and coriander.


    Season, add lemon juice and red food colouring.


    Put the chicken into the sauce and leave to marinate overnight.


    The next day, skewer the pieces of chicken and roast for 10 minutes.


    Serve on a bed of lettuce, with slices of onion, lemon and tomato.








    Advice :


    Served with rice, this can also be a maincourse or side dish.

    slice and stir fry a packet of chicken breasts


    add to chicken 1 tin coconut milk and 1 tablespoon or to taste tesco thai green curry paste and a handful of those thin green beans and cook till the beans are done. just before serving add potatoes cut in large chunks and hard boiled eggs cut in half. serve with rice. delish
