BACON STUFFED MUSHROOMS


Ingredients (for 4 persons):





500g of large-capped mushrooms


50g of diced bacon


50g of thoroughly chopped onions


20g butter


1 table spoon of tomato puree


2 eggs


2 to 3 table spoons of breadcrumbs


salt, pepper


1 bunch of chives


Method





Clean the mushrooms. Remove the stems and chop these thoroughly. Melt the butter in a pan and fry bacon, onions and chopped mushrooms stems lightly. Add the tomato puree and some salt and pepper. Take it off the heat. First, mix the eggs in carefully and then add the breadcrumbs and the chopped chives. Spoon all this mess into each mushroom cap. Put some cheese or butter on top. Bake it for about 10 minutes in the oven, preheated to 200 掳C.





CHEESE AND CHIVE MUSHROOMS





4 large open mushrooms


100g/3陆oz cream cheese


1tsp garlic, creamed


1tsp chives, chopped


50g/2oz fresh white breadcrumbs


25g/1oz parmesan, grated


1tsp parsley, chopped


salt and pepper


oil to drizzle


Method





Preheat the oven to 180C/350F/Gas 4. Cut the stalks off the mushrooms and lay them in an open ovenproof dish, underside facing up. Mix together the cream cheese, garlic, and chives and season. Divide the mixture into four and spread over the mushrooms. Mix the breadcrumbs with the parsley, parmesan and season. Cover the top of the mushrooms with the crumb mixture and drizzle lightly with oil. Bake in the oven for 30 minutes until the top is golden.


Serve with a green salad and crusty bread.

SPINACH STUFFED MUSHROOMS


10 lg. mushrooms


1 tbsp. lemon juice


2 tbsp. butter or margarine


1/3 cup chopped onion


1/4 tsp. thyme


15 oz frozen or fresh cooked spinach, well drained


1 cup grated Swiss cheese





Remove mushroom stems; finely chop stems. Toss mushroom caps in lemon juice. In skillet, cook mushroom caps in butter 2 minutes per side. Remove caps to baking dish. Add remaining lemon juice, chopped mushrooms, onion and thyme to skillet. Cook until tender; remove from heat. Stir in spinach and cheese. Spoon into mushroom caps. Bake at 350F, 15 minutes or until heated through.


Serves 5





Microwave Directions: Remove mushroom stems; finely chop stems. Toss mushrooms caps in lemon juice. In microwavable bowl, combine onion, chopped mushrooms, thyme and 1 tablespoon butter; cook on high 3 minutes. Add spinach and cheese; mix well. Spoon into caps; arrange on a microwave proof plate. Cook on high 4 minutes.

Stuffed Mushrooms Parmesagna





12 - 15 large mushrooms





2 tbsp butter





1 medium onion, chopped finely





2 oz diced pepperoni





录 cup finely chopped green pepper





1 small clove garlic, minced





陆 cup finely crushed Ritz crackers, about 12 crackers





3 tbsp grated Parmesan





1 tbsp chopped parsley





陆 tspn seasoned salt





录 tspn dried oregano





1/3 cup chicken broth











Preheat oven to 325掳F.





Wash mushrooms and remove stems. Finely chop stems and reserve.





In a large skillet, melt butter and cook onion, pepperoni, green pepper, garlic, and chopped mushroom stems until tender but not brown.





Add crackers, parmesan, parsley, salt, oregano, a dash of pepper, and mix well. Stir in broth





Spoon mixture into mushroom caps, heaping tops.





In a shallow baking pan with 录'; water covering bottom of pan, place stuffed mushrooms.





Bake uncovered about 25 minutes until heated thoroughly.





Cajun Stuffed Mushrooms


1/2 pound Andouille sausage -- Cajun-style (if links remove casing)





1 cup chopped onion





1/4 cup bell pepper -- chopped





1/2 teaspoon salt





1/2 teaspoon garlic powder





1/2 teaspoon cayenne pepper





1 cup water





3/4 cup instant rice





1/4 cup parsley -- chopped





24 large mushroom caps -- save stems





2 cups mayonnaise





1 1/2 cups Parmesan cheese

















Brown sausage, onions, bell pepper and mushroom stems. Add salt, garlic powder and cayenne pepper. Add water and bring to a boil. Add rice and parsley. Cover and remove from heat. Let stand for 15 minutes.


Meanwhile, blend mayonnaise and cheese. Combine half of mayonnaise mixture to all of cooked sausage-rice mixture. Stuff mushrooms with this and spoon remaining mayonnaise-cheese mixture on top of mushrooms.


Place in 9 x 12-inch baking dish and bake at 350F for 35 minutes. Mushrooms will appear puffy and golden when done.
BAKED STUFFED MUSHROOMS





1 stick butter


1 small onion, minced


3 tablespoons Parmesan cheese


1/3 cup sweet Vermouth


1/2 teaspoons Worcestershire sauce


1 cup plain bread crumbs


1 lb. mushrooms (remove stems and finely chop)


1/2 teaspoon salt


1/4 teaspoon pepper


3/4 teaspoon garlic powder


1/4 teaspoon oregano





Melt butter in skillet. Cook onion until translucent. Add chopped stems. Sitr in bread crumbs, seasonings, and cheese. Brown lightly. Add sweet Vermouth last. Toss lightly to combine well. Stuff mushroom caps with mixture. Bake at 350掳F for 15 minutes.
