Quick, easy dinner recipes?

What are some quick and easy dinner fixes? I'm not looking for things like grilled cheese.. something that is interesting and delicious, but easy and quick to throw together. With few ingredients?Quick, easy dinner recipes?
Savory Chicken Breasts





4 skinless, boneless chicken breast halves


ground black pepper to taste


4 slices Swiss cheese


1 (10.75 ounce) can condensed cream of chicken soup


1/4 cup milk


1 cup dry bread crumbs


3 tablespoons butter, melted





Preheat oven to 350 degrees F (175 degrees C).


Place chicken breasts in a 9x13 inch baking dish. Season with ground black pepper to taste. Top each breast with a slice of cheese.


Mix together the soup and milk and pour mixture over chicken. Sprinkle bread crumbs on top and drizzle with melted butter/margarine. Bake covered in the preheated oven for 30 minutes. Uncover and bake for another 20 minutes or until golden brown. Serve over cooked noodles.

Easy Cheesy Chicken Bake





1 (11 ounce) can condensed cheese soup


1/2 (10.75 ounce) can water


1 teaspoon dried parsley


3 skinless, boneless chicken breast halves


6 potatoes, sliced


1 head fresh broccoli, chopped





Preheat oven to 350 degrees F (175 degrees C).


In a medium bowl combine soup with water and parsley and mix together. Place chicken and potatoes in a 9x13 inch baking dish and pour cheese mixture over all. Cover dish with aluminum foil.


Bake, covered, in preheated oven for 60 minutes. Add broccoli to dish and bake for another 10 to 15 minutes, or until cooked through and tender.


Serve over noodles or rice

Banh-Mi Style Vietnamese Baguette





* 2 portobello mushroom caps, sliced


* 2 teaspoons olive oil


* salt and pepper to taste


* 1 carrot, sliced into sticks


* 1 daikon (white) radish, sliced into sticks


* 1 cup rice vinegar


* 1/2 cup fresh lime juice


* 1/2 cup cold water


* 1/2 cup chilled lime juice


* 2 teaspoons soy sauce


* 1 teaspoon nuoc mam (Vietnamese fish sauce)


* 1/2 teaspoon toasted sesame oil


* 2 tablespoons canola oil


* 2 teaspoons minced garlic


* 1/3 cup white sugar


* 1/3 cup cold water


* 1 jalapeno pepper, thinly sliced


* 8 sprigs fresh cilantro with stems


* 1 medium cucumber, sliced into thin strips


* 2 sprigs fresh Thai basil


* 2 (7 inch) French bread baguettes, split lengthwise











DIRECTIONS





1. Preheat the oven to 450 degrees F (230 degrees C). Place the mushrooms on a baking sheet. Drizzle with a little olive oil and season with salt and pepper. Roast in the preheated oven for about 25 minutes. Cool slightly, then slice into strips.


2. While the mushrooms are roasting, bring a saucepan of water to a boil. Plunge the carrot and radish sticks into the boiling water and after a few seconds, remove them and plunge them into a bowl of ice water to stop the cooking. In a separate bowl, stir together the rice vinegar, 1/2 cup of lime juice and 1/2 cup cold water. Transfer the carrot and radish to the vinegar and lime marinade and let them soak for at least 15 minutes, longer if it's convenient.


3. In a small bowl, stir together the remaining lime juice, soy sauce, fish sauce, sesame oil, canola oil, 1/3 cup sugar and 1/3 cup water. This is the sandwich sauce.


4. To assemble sandwiches, sprinkle a little of the sandwich sauce onto each half of the French loaves. Place the roasted mushrooms onto the bottom half of each roll and sprinkle with a little more sauce. Top with a few slices of jalapeno, a few sticks of carrot and radish (minus the marinade), cucumber, basil and cilantro. Close with the tops of the bread and serve.
Hamburger Green Bean Casserole is my favorite...





*Brown about a pound of ground beef or turkey with 1 chopped onion.


*Drain it and add a can of tomato sauce and a can of green beans.


*Put it in a glass/ceramic casserole dish, I prefer a shallow dish so it cooks more evenly.


*Prepare about 2 cups (dry) of instant mashed potatoes and then spread a layer of mashed potatoes on top of the green bean/burger mixture.


*Top with a layer of cheddar cheese, or whatever you have handy.





Thats it. Its sooo delicious and easy. Its a family favorite for 20+ years.
My mom's honey mustard curry chicken is the tastiest 'easy' recipe I have. Here is the basic sauce, which you can pour over any cut of chicken (I usually do a whole cut up fryer chicken, but you can use any kind of meat): melt half a cube of butter in a bowl, add 1 tablespoon of dijon mustard, 2 tablespoons honey %26amp; 2 teaspoons of curry powder. Mix well and pour over chicken, bake (time depends on chicken-boneless skinless chx breast only take about an hour, a bone-in chicken will take about an hour %26amp; 1/2).
MEXICAN BEEF TART


2 cans Refrigerated biscuits (or your fav homemade)


1 lb Hamburger, cooked and drained


1 small Onion, chopped


1 medium Green pepper, chopped


16 oz Salsa, your choice of heat


2 cups Shredded cheese of your choice


Sour cream and scallions as garnish if desired


1. Separate biscuits and cut each in half


2. Place into greased 9x13 pan


3. Mix hamburger, onion, green pepper and salsa


4. Pour over biscuits


5. Bake at 350 for 25 minutes


6. Top with cheese, return to oven for 10 minutes


7. Serve with sour cream and scallions as garnish

Rosy Beans %26amp; Rice





陆 cup tomato juice


陆 cup quick-cooking rice, uncooked


1 can (19 ounces) Campbell鈥檚 Chunky Bean %26amp; Ham soup





In large saucepan, over medium heat, heat tomato juice to boiling. Add rice. Remove from heat. Cover; let stand 5 minutes.


Add soup; heat through.





Makes 2 陆 cups or 2 servings





For one serving, substitute a 10 ounce can and halve remaining ingredients.

How about a great version of a updated grilled cheese sammie.





get a loaf of a hearty country style bread. Slice it. then spread your favorite brand of store bought pasta sauce/marinara sauce over both slices. Top each bread slice with a good Taleggio cheese slices. Press together. butter each exposed side of the bread and then toast like you would a normal grilled cheese. If you have a panini press or sammie grill, then use that instead. This is my fave sandwich. You can also add a bit of fresh basil for an added boost of flavor

500gm Minced Beef. (pork etc)


2 Medium onions, chopped


2 Cloves Garlic, crushed (optional)


2 Medium carrots, chopped


2C Peas.


2C Corn.


Tomato sauce or paste


Worcestershire sauce.


Salt %26amp; Pepper.


Fry off the mince onions and garlic.


Transfer to a casserole dish.


Add veggies, sauces and seasonings and combine.


Pour in some stock, or water and stock cubes.


Cook in a 165C oven for 30 - 45 minutes.


Thicken with a little flour and water and return for 5 - 10 minutes.


Serve with mashed potatoes.


Some curry or chilli powder could be used.
Do you have a crock pot or a slow cooker? They are amazing! They make dinner time a breeze! All you have to do is throw everything into it in the morning, set it to low, and by dinner time you have a great tasting meal that cooked all day, but took you no time!





If not, you can go to http://www.foodnetwork.com and look up Rachael Ray's 30 Minute Meals. They don't actually take 30 minutes (because in the real world, we don't have anybody who preps all of the food and does most of the work for us like they do for her on that show) but they definitely take less than an hour. Most of the ones that I've tried are really good, and are worth trying.

Jacket potato with filling of your choice - tuna mayonnaise, chili beef, beans, cheese - plus salad.





Stir fry either with meat and veg or all vegetables. Serve with boiled rice.
