Anyone have a quick, easy crockpot fajitas recipe?

I am making fajitas for dinner and was wondering if anyone has a quick an easy crockpot recipe for this?Anyone have a quick, easy crockpot fajitas recipe?
This is how my mom always made them:





1 1/2 pounds flank steak, trimmed and cut into large chunks


1 jar salsa, around 1 1/2 cups


1/2 cup chopped sweet onion


half of green bell pepper, cut in strips


half of red bell pepper, cut in strips





Just throw it all in the crockpot and stir well. Cook on low about 8 hrs or high 4-5 hours. When its done, take it out the meat shred it up with two forks. Serve in warmed flour tortillas with pepper mixture and your favorite toppings. This served my parents and two kids. If you think you are going to need more...just up the quantities a little. Experiment and add what you like...It is next to impossible to mess this recipe up.Anyone have a quick, easy crockpot fajitas recipe?
Crockpot Chicken Fajitas


2 pounds individually quick-frozen chicken breast tenderloin fillets





1 1.4-ounce package fajita seasonings





2 1/2 cups (1/2 package) frozen-pepper stir-fry





Juice of 1 lime (approximately 1 1/2 tablespoons)





1/2 cup reduced-sodium chicken broth





12 fajita-sized flour tortillas





1 cup reduced-fat shredded cheddar or Monterrey Jack cheese





Fat-free sour cream, for garnish





Shredded lettuce, for garnish





Diced tomato, for garnish





Place frozen chicken tenderloin fillets in crock pot. Sprinkle fajita seasonings over top. Add pepper stir-fry, lime juice and chicken broth. Cover and cook on low for 6 to 8 hours.





Spoon some of the chicken mixture onto a tortilla, sprinkle with some of the cheese and garnish as desired with the sour cream shredded lettuce and diced tomato.





Makes 6 servings.
Beef Fajitas


cook time: 7 to 8 hours


1 beef flank steak (2 pounds) thinly sliced


1 cup tomato juice


2 garlic cloves, minced


1 tablespoon minced fresh cilantro


1 teaspoon chili powder


1 teaspoon ground cumin


1/2 teaspoon salt


1/2 teaspoon ground coriander


1 medium onion, sliced


1 each medium green and sweet red pepper, julienned


1 medium jalapeno, cut into thin strips


12 flour tortillas (6 inches)


Sour cream, guacamole, salsa or shredded cheddar cheese, optional.


Place beef in a slow cooker. Combine the next seven ingredients; pour over beef. Cover and cook on low for 6-7 hours. Add onion, peppers and jalapeno. Cover and cook 1 hour longer or until meat and vegetables are tender. Using a slotted spoon, place about 1/2 cup of meat-vegetable mixture on each tortilla. Add desired toppings. Roll up.


Yield: 12 servings
I find this question extremely interesting since by definition fajitas are grilled.
