Texas Sheet Cake with Frosting
1 cup butter
1 cup water
1/4 cup cocoa
2 cups sugar
2 cups flour
1/8 teaspoon salt
2 eggs
1 teaspoon baking soda
1/2 cup sour cream
1 teaspoon vanilla
Frosting, below
chopped pecans
PREPARATION:
Frosting
1/2 cup butter
1/4 cup cocoa
1/4 cup plus 2 tablespoons milk
1 box (1 pound) confectioners' sugar, sifted (4 1/4 cups sifted)
1/2 teaspoon vanilla
Cake: Combine butter, water, and cocoa in saucepan over medium heat; heat until butter melts.
Add sugar, flour, salt, eggs, soda, sour cream, and vanilla; mix well. Pour into a 15x10x1-inch jelly roll pan. Bake at 350掳 for 20 minutes. Spread frosting over hot cake and sprinkle with chopped pecans.
For frosting, combine butter, cocoa, and milk in a saucepan; bring to a boil. Add remaining ingredients and mix well with electric mixer. Spread over the hot sheet cake then sprinkle with chopped pecans.Does anyone have a quick and simple recipe for Texas Sheet Cake?

2 c. flour
2 c. sugar
2 cubes butter
1 c. water
1/4 c. cocoa
1/2 c. sour cream
2 eggs
1 tsp. soda
1 tsp. vanilla and mix together.
Pour in cookie sheet with sides (jelly roll pan). Bake at 400 degrees for 20 minutes.
HINTS: Any kind of cocoa or chocolate drink mix will work for the cocoa, depending how light or dark you want it. I've found my favorite to be Hershey's European process chocolate. Yogurt, or, I think, buttermilk, can be substituted for the sour cream. If you don't want the icing, you can just sprinkle with powdered sugar

TEXAS SHEET CAKE

1 cup margarine
1 cup water
2 cups sugar
2 cups flour
2 beaten eggs

Frosting (recipe follows)
Preheat oven to 400 F. Grease and flour a 10x15x1-inch pan.
In a medium saucepan, bring cocoa, margarine and water to a boil, stirring constantly, over medium heat.
In a large bowl, stir together the sugar and flour. Pour the cocoa mixture over and blend well. Add the eggs, buttermilk, baking soda and vanilla. Spread evenly in the prepared pan and bake for 20 minutes. Prepare the frosting.
When the cake is done, immediately pour the frosting over it and spread evenly.
Makes 20 servings.
Frosting: In a medium saucepan, bring to a boil 1/2 cup margarine, 1/4 cup cocoa and 6 tablespoons milk. Add 1 pound powdered sugar, 1 teaspoon vanilla and 1 cup chopped pecans.

1 c. oil
1 c. water
4 tbsp. sweetened cocoa
2 c. flour
Dash of salt
2 eggs
1/2 c. sour cream or buttermilk
1 tbsp. soda
Bring oil, water, and cocoa to a boil. Note: If using unsweetened cocoa, add 1/4 cup confectioner's sugar.
Remove from heat; add dry ingredients. Beat eggs in a dish; add sour cream and baking soda. Mix well. Add to chocolate mixture and beat well. Bake in a greased jelly roll pan at 375 degrees for 20 to 22 minutes. Cookie sheet can be used.
ICING FOR TEXAS SHEET CAKE:
1 stick (4 oz.) butter
4 tbsp. cocoa
4 to 6 tbsp. milk
3/4 to 1 box icing sugar (little less than 1 lb.)
1 tsp. vanilla
1 c. chopped nuts
Bring butter, cocoa, and milk to a boil. Remove from heat. Add icing sugar and vanilla. Spread icing on Texas Sheet Cake while it is still warm. Sprinkle chopped nuts on top of cake if desired.

Here is my mom's recipe and I LOVE it...she used to make it for my birthday cakes.
It seems long, but it is pretty simple. Make sure you don't make the icing until the cake is already completely cool, or it will harden up on you.
CAKE:
2 C flour
2C sugar
1/2 C butter
3-4 Tbs cocoa
1C Water
1/2 C shortening (I just use extra butter)
1/2 C buttermilk
1tsp baking soda
2 eggs
1tsp vanilla
**Mix flour and sugar in large bowl. Heat water, cocoa butter and shortening to a boil. Remove from heat and add to flour mixture. Mix well. Add buttermilk, eggs, vanilla and baking soda. Mix well and spread in cookie sheet. BAKE AT 375` for 20-25 minutes.
ICING RECPIE:
1/2 C butter
3Tbs cocoa
6Tbs milk
3 3/4 C powdered sugar (equal to about one box)
1tsp vanilla
1tsp cinnamon
**Heat butter, cocoa, and milk to a boil. Remove from heat and mix in powdered sugar, vanilla, and cinnamon. POUR ON CAKE WHEN CAKE IS COMPLETELY COOL.
