Once again I will recommend my slowly becoming famous Chicken and Broccoli Pesto. It is super easy, takes 20 or so minutes and its a surefire hit :)
4 Chicken breasts, 1 inche cubes or slices
1 head broccoli, cut into small florets
1 lb Linguini or Long Egg Noodles ( I find the egg noodles hold more flavor and produce a dryer more concentrated taste, but its your preference)
1 Jar Pesto, or homemade (recipe follows)
3 cloves garlic, finely chopped.
2-3 Shallots, finely chopped.
Pine Nuts (roasted or plain)
1 TB olive oil (or oil of your preference)
Parmesan Cheese
(this is the recipe I use to make pesto, feel free to use your own)
Pesto Recipe:
2-3 Cups fresh basil
1/2-3/4 cup olive oil
1/4 cup parmesan cheese
pinch of salt
Put everything but the oil in the blender and work it a bit, slowly add the oil until its the consistency you like.
Steam broccoli until just bright green. About 3-5 minutes. Set aside.
Heat pan to medium - medium high, add a little oil and lightly brown the garlic and shallots. Add chicken and cook until just about done. Set aside.
Boil salted water and cook pasta al dente. Drain it and add it to the chicken. (If you dont have a large enough skillet to do that, just put the pasta back in the boiler pot and add everything to that)
Heat over medium, toss to distribute garlic. Add broccoli and pine nuts. Add pesto sauce and toss. Let it cook up about 3-5 minutes so flavors can settle. Plate and sprinkle with parmesan cheese.
I serve this dinner with ciabatta bread, toasted in the oven with garlic and parmesan. Enjoy!Looking for a quick and easy dinner recipe?
risotto, you can find a recipe almost anywhere online or in a cookbook, its trendy at the moment, really tasty, you can choose what you want to put in it and its quite healthy too, depending on the ingredients you flavour it with of course.
