I'm trying to thnk of something to make for dinner tonight for me and my other half. We'll both eat anything ( apart from seafood, i'm allergic) I want something that isn't too fiddly but will be a nice treat and something a little different. :)Need a quick and yummy recipe?
Shredded chicken nachos are our favorites. I just boil a pound of chicken and fork shred it when it's done. Add it to a pack of taco seasoning and about a 1/4 cup water and simmer for a few minutes. Next put a layer of taco chips on a sheet pan. Spoon chicken on top and add shredded cheddar. Pop into an oven at 350 degrees until cheese is melted. Then top with shredded lettuce, chopped tomato, black olives and sour cream and salsa. Yummy!!Need a quick and yummy recipe?

Whole-Wheat Spaghetti with Hazelnuts and Asparagus
12 ounces whole-wheat spaghetti
1 bunch asparagus, ends trimmed
1/3 cup extra-virgin olive oil
1/2 cup (about 2 ounces) hazelnuts, toasted, skinned, and roughly chopped (or substitute pine nuts)
1 teaspoon kosher salt
1/4 teaspoon black pepper
1 small wedge (about 2 ounces) Parmesan
Cook the spaghetti according to the package directions.
Meanwhile, with a vegetable peeler, shave the asparagus lengthwise into long ribbons. Add the asparagus to the pasta water during the last 2 minutes of cooking. Drain the spaghetti and asparagus and return them to the pot. Add the oil and hazelnuts; toss. Season with the salt and pepper; toss again. Divide the spaghetti among individual plates. With the peeler, shave the Parmesan over the top.
Tip: To toast hazelnuts, place them on a baking sheet in a 350掳 oven until they're barely browned and fragrant, 7 to 12 minutes. To remove the skins, transfer the hot nuts to a large kitchen towel, fold one end over the nuts, and rub briskly.
Brocolli and macaroni .....
Boil a pot of water ( just like cooking spaghetti) ... put in 1 lb of pasta and cut up head of brocolli ....... when both are done ... drain most of water but not all ... add some veg oil or olive oil ..salt to taste......

1 chicken 9whatver parts you want, preferably with skin on)
2 rosemary flakes
3 salt, seasonings etc
marinate chicken with spices
then bake, possilby with vegetables underneath the tray
Something that we make from time to time, it has no name..But you start with chicken (you can buy it already cooked at the store in a deli case, or you can buy the chicken strips that are grilled and cooked in the lunch meat section) and some polish sausage ( if you don't like polish sausage use more chicken..or vise versa), Then use a boxed dirty rice mix, increase the water quite a bit, and cook according to package directions, once it is boiling, add in some chopped cabbage, or some chopped kale greens, my daughter likes both..add in your chicken and sausage, Cook til the rice is tender. You have a soup/stew that is both a bit spicy and has lots of good veggies too and takes only about 30 minutes to make in one pan. The cabbage/kale and extra water take alot of the hottness out of the rice, so if you love spicy food, add in a few shakes of hot sauce, red pepper, some cumin, and/or red pepper flakes.
It's really nice on a cold day, just enough heat to warm you up. Pair it up with a salad or some cornbread.
you can grill some quick steaks sauteed with onions and a bake potatoe to top it off
Enchiladas de Queso (Flat or Rolled Cheese Tortillas)
Yield: 4 servings Heating Time: Approximately
Temperature: Medium-High 15 minutes
350掳F Freezes Well
12 corn tortillas* 2 onions chopped
Shortening 4 cups Red or Green Chile sauce*
3 cups grated sharp cheddar cheese
1. Heat 1/2 inch of shortening in a heavy pan at medium-high heat.
2. Quickly dip each tortilla into the shortening to soften. Drain on
absorbent towels.
3. Assemble the enchiladas by placing 1/4 cup sauce on each dinner
place, followed by a tortilla (tortilla can be rolled after filling
is placed on it), 1/4 cup sauce, 1/4 cup cheese, and onion. Repeat
twice. Top with remaining sauce.
4. Place in 350掳F oven for 15 minutes, or until the cheese
melts. Garnish with lettuce.
NOTE: Traditionally, enchiladas are topped with a fried or poached
egg before serving. also great to add left over chicken too!
I make a nice chicken casserole, which is really easy if you both like that. Serve it with a nice fresh salad, and something good for dessert, and a bottle of wine!
All I do is cut up some chicken into strips, and mix it with a can of cream of mushroom soup. Then pour it into a casserole pan. Take one box of prepared stuffing, and pour it over the top. Pour a small amount of water over the stuffing, just so it's lightly moistened everywhere. Sprinkle the top with some cheese. Pop it in a 350 oven for about an hour untill the stuffing seems right, and the chicken is good through. It'll be nice and soft at the bottom. Quick and easy.
TACO SOUP!!!!!!!! It's the best! Just brown ground beef, chop an onion, open some cans, and heat. BAM! Your done. This is a good one. You'll keep it after you try it.

Steaks on the grill sound good to me. Before putting them on the grill, spray a baking dish with butter flavor crisco, add cut(not peeled)red potatoes, little salt %26amp; pepper, %26amp; Italian Seasoning sprinkled over them. Spray tops of potatoes with butter flavor crisco, stir %26amp; bake at 425 for 30- 45 minutes or until done %26amp; lightly brown. You may need to stir %26amp; turn once during baking. Serve with a salad %26amp; your steaks from the grill.
I am making a stuffed bread and a nice salad for dinner tonight something diffrent getting tired of the same old stuff. I bought ref. pizza crust and opened it and then I layered as follows, garlic posder, onion powder and ham, salami, pepperoni and mozz cheese then fold to short end in and then fold two longs side up and pinch to make sure it is sealed bake in the oven at 350 for 35 minutes. I also make one the same way I just put tukey, bacon cooked, frozen broccoli defrosted cheddar cheese and make it the same way. I made a few of these last night because they also freeze very well just wrap them good and you can have them ready you can also cook them from the frozen state it just takes longer. You can put what ever combination of stuff in it that you would like. Hope you enjoy
CHICKEN WITH CASHEWS
1 pound chicken breast, boned %26amp; sliced thin
2 tablespoons soy sauce
1 tablespoon cornstarch
4 tablespoons oil
1/2 teaspoon salt
1 small chopped onion
1/2 pound mushroom, trimmed and sliced
1 small cabbage head, shredded
1 teaspoon sugar
2 cups cashews
1 teaspoon cornstarch
1/4 cup soy sauce
3 ounces Chinese noodles
Place chicken, 2 tablespoons soy sauce and 1 tablespoon cornstarch in a bowl; let stand for 15 minutes. Heat 2 tablespoons oil with salt in wok or heavy skillet over high heat. Add chicken and stir-fry until white and firm. Add onion and mushrooms and stir-fry until vegetables are soft.
Remove from pan.
Add 2 tablespoons oil to wok. Stir in cabbage and sugar. Stir-fry 3 or 4 minutes until cabbage is crisp tender. Return chicken-vegetable mixture to wok. Add cashews and toss to combine. Add 1 teaspoon cornstarch to 1/4 cup soy sauce. Stir into chicken-cashew mixture. Cover and steam 1 minute. Uncover and stir until sauce is slightly thickened. Sprinkle with Chinese fried noodles before serving. Makes 4 to 6 servings.
Serving Size: 6
Lemon pepper chicken pasta
Cook enough spaghetti noodles for 2 people
2 chicken breasts diced
1 can sliced black olives drained
1 can of stewed tomatoes drained
2-3 tbsp of lemon pepper seasoning
2 tbsp EVOO
toss the chicken with the lemon pepper then brown in the EVOO when the chicken has cooked thru add the olives and tomatoes simmer til warmed all the way thru
Serve over spaghetti noodles and garnish with parmesan and parsley sprigs.
Can also make great garlic toast. Use your favorite loaf of french bread and spread with butter mix. recipe below
1 stick of butter
1 tsp garlic powder
1/4 tsp garlic salt
1/2 tsp onion powder
2 tsp finely chopped onions
2 tbsp fresh grated parmesan
1 tsp italian seasoning
melt butter then mix all ingredients together to make a spread
butter the loaf and toast in 400 degree oven til brown and toasty on top usually about 8 minutes depending on your stove
I like to make this (and this is a very good versatile thing to use with left overs as well). You can stick anything into these biscuits.
Ham and Cheese Biscuit Pockets
8 thick slices of Ham from the deli (off the bone if possible)
1 bag of shredded cheese (any kind you like)
1 roll of premade biscuits (I prefer Grands Flaky)
Preheat oven to 350
Grease a muffin pan
Take a biscuit and flatten it with your fingers...Then stuff it into the muffin pan. Then tear up, into bite size pieces, a piece of ham. Put it into the biscuit that is now in the pan. Add cheese..However much you want to suit your taste. Repeat until all biscuits are gone. Bake for 20 minutes or so until they are golden brown.
This recipe would go well with a salad and maybe some baked beans.
