Peel a pineapple and slice lengthwise in thin strips. Set aside while you chop up some mint very finely. If you have a mortar and pestle, you can mash it up until it becomes a paste like mix. Add some granulated sugar until you have enough to sprinkle all over the pineapple. Serve after dinner and you will be a sensation!

Raven...hi there I had some leftover ham ....and a sweet bell pepper and some eggs...so tonight we had a omelet with a Mexican cheese ...added to these ingredients...

3/4 cup cooked smoked ham chopped small

1/2 cup chopped sweet green bell pepper

4 or 5 eggs....beaten with a few drops of water

black pepper

1/2 cup shredded cheese ( I used the bag of cheese for Mexican dishes) you get in the dairy section...

some margarine or butter melted in a frying pan on medium heat....

Beat the eggs add the black pepper...set aside

cook the ham and green pepper together for just a few minutes...stir around..then pour the beaten egg over it...

Now top with the cheese and reduce the heat until the egg begins to set around the edges.....not with a spatula...start lifting the egg around the edges and into the center....and start folding it over on to itself....as it cooks...keep doing this until it's rolled over to the far side of the pan.....now lift out and serve.......with toast and dish of fruit..like peaches or pears...

We had this tonight it was yummy, filling and easy
