cut up and cook chicken breasts, then assemble on tortillas: grilled chicken, chili beans, diced stewed tomato's (out of a can) and grated pepper jack cheese. Roll these bad boys up and line them in a 9x13 baking dish. Cover with canned green chili enchilada sauce and cover the whole thing with mozzarella and pepper jack cheese (can use whatever cheese you like, this is just my preference). Bake in the oven at 350 until cheese is melted and sauce is bubbly. Might cover with foil the first 30 minutes or so, otherwise cheese tends to burn. Always spray your foil with cooking spray before you put on a cheese dish to prevent from sticking!
Sounds hard but it's so simple and super good!
A simple snack or appetizer would be to melt some cream cheese in a pan and then stir in your chili beans (assuming they're in some sort of chili bean sauce). About 2 cans of beans to 1 package of cream cheese. Heat through and serve with tortilla chips! Looks gross but it tastes great! We make this on football Sundays all the time.Anyone have a good quick and easy recipe for Chilli Beans?
