1 (9-inch) graham cracker crust

2 (8-ounce) packages cream cheese, at room temperature

1/2 cup sugar

1/4 teaspoon vanilla extract

2 eggs

1/4 cup caramel topping

12 pecan halves, plus 2 tablespoons chopped pecans

Preheat the oven to 350 degrees F.

Reserve 3/4 cup of the apple filling; set aside. Spoon the remaining filling into the crust. Beat together the cream cheese, sugar, and vanilla until smooth. Add the eggs and mix well. Pour this over the pie filling.

Bake for 30 to 35 minutes, or until the center of the cake is set. Cool to room temperature.

Mix the reserved pie filling and caramel topping in a small saucepan and heat for about 1 minute, or until spreadable. Spoon the apple-caramel mixture over the top of the cheesecake and spread evenly. Decorate the edge of the cake with pecan halves and sprinkle with chopped pecans. Refrigerate the cake until ready to serve.

~~ Lemon Pillow Cake ~~

1 white cake mix

1 can lemon pie filling

Mix cake as directed on box and pour into a 9x13 pan. Place spoonsful of lemon pie filling in blobs over batter. Bake as directed on the box. Let cool completely. Cake batter covers blobs, so there will be pockets of lemony filling inside.

Frosting

1 can ready to spread lemon flavored frosting

1 tub of Cool Whip

Mix frosting and Cool Whip together and spread on cake. This does need to be kept refrigerated.

Variation: Use chocolate cake mix, cherry pie filling, and chocolate icing to make a Black Forest Pillow Cake.

Nectarine %26amp; Blueberry Buckle

Preheat oven to 350 degrees F. Coat 2 qt. shallow baking dish w/ 2 Tbs. butter or nonstick cooking spray.

In a bowl, toss 3-4 nectarines or (pitted and cut into eighths) and 1/2 blueberries with 3 Tbs sugar. Let stand for 5 minutes.

Meanwhile, stir together until smooth:

1 pkg white or yellow cake mix

1 cup milk

6 Tbs. melted butter

1 tsp. ground cinnamon

Spread cake batter in baking dish. Top evenly with fruit mixture. Bake 55-60 minutes. Cool on rack 10-15 minutes. Dust w/ confectioners sugar. Serve warm.
