There are times where I can just cook whatever is at the top of my mind.. but then you get to the point where you hit a wall and you cant think of anything else...
So, any help will do.. and I usually do these meals in a specific amount of time due to some having to balance work and school ...

Frozen dinners already cooked - follow directions on the boxes, warm in microwave. Stick with the big name brands for good taste. Add a can of veggies or frozen veggies as a side dish. Ask a clerk to show you where to find them.

Go to the store and buy 2-3 cans of chicken depending on your own taste, add about a cup of mayo more or less depending on the amount of chicken you use but just enough so it isn't dry. Then add some walnuts, a small can of pineapple (I get the ones that are in chunks) and some grapes sliced in half and you have a pretty good and easy chicken salad. I like to add a leaf of lettuce and eat it on toasted bread. Refrigerate the rest and you have your lunch for the next day!

Turkey Tortellini Soup Recipe
8 C. turkey or chicken stock
1/2 C. chopped red bell pepper
2 zucchini, unpeeled, quartered lengthwise and sliced
9 oz. package uncooked cheese-filled tortellini
2 to 3 C. cubed cooked turkey or chicken
1/4 C. chopped fresh parsley
salt and freshly ground pepper to taste
In a soup pot over high heat, bring stock to a boil. Add vegetables and tortellini. Reduce heat to medium-low and simmer, uncovered, until vegetables and tortellini are tender, about 7 minutes. Add turkey, parsley, salt and pepper and simmer until flavors are blended, 5 to 10 minutes longer.
Serves 6
Summer Spaghetti Salad
16 oz. mozzarella cheese
5 ripe tomatoes, peeled, seeded and coarsely chopped
1 C. fresh basil leaves, coarsely chopped
1 large clove garlic, pressed
2 T. salt
1 T. olive oil
16 oz. thin spaghetti
salt and pepper
Bring a large pot of water to a boil.
Cut the mozzarella into small cubes and set aside in a small bowl. Combine the tomatoes, basil and garlic in another bowl.
When the water is boiling hard, add 2 tablespoons salt and the oil. Add the spaghetti and cook just until it is al dente. Do not overcook. Quickly drain the spaghetti and return it at once to the warm pot. Immediately stir in the mozzarella; the heat of the pasta will melt it slightly. Stir in the contents of the other bowl. Season to taste with salt and pepper. Transfer to a serving bowl and serve at room temperature.
Serves 4 to 6.
Chicken Taco Salad Recipe
1 1/2 lbs. cooked skinless, boneless chicken breast
2 large bunches green onions
1 C. dairy sour cream
1 C. chunky picante salsa
8 C. tortilla chips
Cut chicken into 1/2 - to 3/4 -inch pieces. Thinly slice green onions.
In a medium mixing bowl, stir together sour cream and salsa until well blended. Add chicken and 1 cup green onions. Toss to mix.
Make a bed of chips on salad plates, then spoon salad in center. Sprinkle remaining green onions on top.
Makes 6 servings.
